Cataplana
Ingredients
- 300 g shrimp
- 200 g chorizo diced
- 100 g chicken breast diced
- 2 large onions finely chopped
- 4 cloves of garlic peeled
- 1 small green bell pepper finely chopped
- 1 small red bell pepper finely chopped
- 1 can of diced tomatoes
- 1 small can of tomato paste
- 100 ml white wine
- 1 tablespoon lemon juice
- 2 tablespoons Tabasco sauce
- 1 tablespoon chives
- 1 bay leaf
- 3 tablespoons fresh parsley chopped
- Olive oil
- Salt to taste
Instructions
- Cut the chorizo into small cubes.
- Cut the chicken breast into cubes.
- Peel and finely chop the onions.
- Peel the garlic.
- Clean the bell peppers and finely chop them.
- Heat olive oil in a pan and sear the chicken on high heat.
- Reduce the heat and cook the chicken until done for about 15 minutes.
- Sauté the onion, garlic, and bell peppers until the onion is translucent.
- Then, add the chorizo and let it sauté for a while.
- Add the diced tomatoes, tomato paste, white wine, lemon juice, Tabasco sauce, chives, and salt.
- Let it simmer on high heat.
- Add the shrimp and let them cook for 2 minutes.
- Garnish the dish with fresh parsley.
