Cauliflower Couscous

Ingredients

  • 2 cauliflowers
  • 3 tbsp. olive oil
  • 1 tbsp. coriander seeds
  • 1 tbsp. of mustard seeds
  • ½ tsp. cinnamon
  • ½ tsp. cardamom
  • ½ tsp. cloves
  • ½ tsp. cumin
  • ½ tsp. ginger
  • ½ tsp. nutmeg
  • 1 block tofu cubed
  • 1 cup dried fruits apricots, dates, raisins…, chopped
  • 1 cup toasted nuts almonds, pecans, cashews…, chopped
  • 1 cup vegetable broth
  • Fresh coriander

Instructions

  • Cut the cauliflower into florets and add to the food processor.
  • Pulse a few times to obtain a granular texture resembling couscous.
  • Set aside.
  • Fry in oil all the spices for about 1 minute, then add tofu to brown, about 5 minutes.
  • Add dry fruits, nuts, broth, and cover.
  • Cook over medium heat for about 5 minutes.
  • Add the cauliflower and cook for 2 minutes.
  • Serve with coriander.
