Cauliflower Couscous
Ingredients
- 2 cauliflowers
- 3 tbsp. olive oil
- 1 tbsp. coriander seeds
- 1 tbsp. of mustard seeds
- ½ tsp. cinnamon
- ½ tsp. cardamom
- ½ tsp. cloves
- ½ tsp. cumin
- ½ tsp. ginger
- ½ tsp. nutmeg
- 1 block tofu cubed
- 1 cup dried fruits apricots, dates, raisins…, chopped
- 1 cup toasted nuts almonds, pecans, cashews…, chopped
- 1 cup vegetable broth
- Fresh coriander
Instructions
- Cut the cauliflower into florets and add to the food processor.
- Pulse a few times to obtain a granular texture resembling couscous.
- Set aside.
- Fry in oil all the spices for about 1 minute, then add tofu to brown, about 5 minutes.
- Add dry fruits, nuts, broth, and cover.
- Cook over medium heat for about 5 minutes.
- Add the cauliflower and cook for 2 minutes.
- Serve with coriander.
