Cheese Burger Soup

Ingredients
- Cooking spray
- 1 garlic clove – minced
- 1 onion – chopped
- 1 celery rib – chopped
- 1 lb lean ground beef
- 2 tbsp all-purpose flour
- 3 cups canned chicken broth – divided
- 1 cup low-fat evaporated milk
- 8 oz Velveeta reduced fat cheese– cubed
- ½ tsp paprika
- ¼ tsp salt
- ¼ tsp black pepper
- 24 baked corn tortilla chips – crumbled
Instructions
- Coat pan with cooking spray preheat medium-high heat
Add:
- Garlic
- Onion
- Celery
Cook 5-10 mins
- Coat slow cooker with cooking spray
- Add vegetables to slow cooker
- Keep pan hot and brown beef, breaking up meat with a wooden spoon as it cooks, about
- Cook 5-6 mins; pour off any liquid and add meat to slow cooker.
- Add to slow cooker
Combine in a bowl:
- Flour
- ½ cup of broth;
Stir until free of lumps
- Pour bowl into same pan and add remaining 2 ½ cups of broth
- Bring to a simmer and add to slow cooker
- About 3-4 mins
Stir into slow cooker:
- Evaporated milk
- Cheese
- Paprika
- Salt & pepper
Cook on low for 2-3 hours
- Crumble chips onto each serving
