Cheesy Bacon Breakfast Pockets
Ingredients
- 1 tbsp chopped fresh chives
- 1 oz softened cream cheese
- Cooking spray
- 3 large eggs lightly beaten
- 3 slices center-cut bacon
- 4 oz low-carb pizza dough
Instructions
- Heat a pan over medium heat and cook the bacon until crisp, about 10 minutes.
- Remove from heat, crumble, and set aside.
- In the same pan, pour in the beaten eggs and cook until set.
- Remove from heat and transfer to a mixing bowl.
- Add the cream cheese, chopped chives, and crumbled bacon to the eggs.
- Mix well to combine.
- Preheat your air fryer to 350°F (175°C).
- Divide the pizza dough into four equal pieces and roll each piece into a circle.
- Place a quarter of the egg mixture in the center of each dough circle.
- Fold the sides of the dough over the filling to meet in the middle, forming a pocket.
- Lightly spray the air fryer basket with cooking spray and place the breakfast pockets inside.
- Cook in the air fryer for 5 minutes, or until the pockets are golden brown and cooked through.
- Serve hot.
