Chicken and Curry Soup
This exotic dish is a fresh taste on traditional chicken soup.

- 1 tablespoon olive oil
- ½ onion diced
- 1 pound chicken breast diced
- 1 tablespoon dried ginger
- 3 teaspoons curry powder
- 1 cup apple cider
- 1 sweet potato cubed
Instructions
- Heat the oil in a saucepan over medium heat.
- Cook the onion until translucent.
- Add the chicken and brown lightly.
- Stir in the ginger and curry powder.
- Pour in the cider, then four cups of water and the sweet potato.
- Boil, then simmer until everything is tender and the chicken is cooked through.
