Chorizo and Refried Bean Nachos

Ingredients
Makes 24 appetizers
- 36 Toasted Corn Tortilla Chips or purchased
- 2 tablespoons vegetable oil or more if needed
- ½ pound fresh bulk chorizo or packaged, with casings removed
- ½ medium onion finely chopped
- 2 cups canned refried beans heated
- 1 cup guacamole purchased or homemade
- Red salsa purchased or homemade
Instructions
- Prepare the tortilla chips, if using homemade.
- Then, in a medium nonstick skillet, cook the chorizo over medium heat until brown, 4 to 5 minutes.
- Add the onion and cook until the onion softens, about 3 minutes.
- To assemble, layer the chips equally with beans, chorizo, and guacamole.
- Put a dollop of salsa on top.
- Serve warm.
