Chorizo and Refried Bean Nachos

Good-quality purchased ingredients can be used to make this rustic appetizer. The oven-baked tortilla chips can be made a day ahead for extra convenience.

Ingredients

Makes 24 appetizers

  • 36 Toasted Corn Tortilla Chips or purchased
  • 2 tablespoons vegetable oil or more if needed
  • ½ pound fresh bulk chorizo or packaged, with casings removed
  • ½ medium onion finely chopped
  • 2 cups canned refried beans heated
  • 1 cup guacamole purchased or homemade
  • Red salsa purchased or homemade

Instructions

  • Prepare the tortilla chips, if using homemade.
  • Then, in a medium nonstick skillet, cook the chorizo over medium heat until brown, 4 to 5 minutes.
  • Add the onion and cook until the onion softens, about 3 minutes.
  • To assemble, layer the chips equally with beans, chorizo, and guacamole.
  • Put a dollop of salsa on top.
  • Serve warm.
