Good-quality purchased ingredients can be used to make this rustic appetizer. The oven-baked tortilla chips can be made a day ahead for extra convenience.

Toasted Corn Tortilla Chips
or purchased

vegetable oil
or more if needed

pound
fresh bulk chorizo
or packaged, with casings removed
▢
½
medium
onion
finely chopped
▢
2
cups
canned refried beans
heated
▢
1
cup
guacamole
purchased or homemade
▢
Red salsa
purchased or homemade
Instructies
Prepare the tortilla chips, if using homemade.
Then, in a medium nonstick skillet, cook the chorizo over medium heat until brown, 4 to 5 minutes.
Add the onion and cook until the onion softens, about 3 minutes.
To assemble, layer the chips equally with beans, chorizo, and guacamole.
Put a dollop of salsa on top.
Serve warm.
