Classic Chicken Parmesan

Ingredients
- 4 boneless skinless chicken breasts (about 1½ pounds), pounded thin
- Kosher salt
- Freshly ground black pepper
- 2 cups all-purpose flour
- 5 eggs beaten
- 2 tablespoons water
- 2 cups bread crumbs
- ¼ cup freshly grated Parmesan cheese plus more for garnish
- ½ cup olive oil
- 2 cups pomodoro sauce
- 1 8-ounce ball fresh mozzarella cheese, thinly sliced
- Fresh basil for garnish
Instructions
Preheat Oven:
- Preheat the oven to 400ºF.
- Line a baking sheet with foil.
Season Chicken:
- Season the chicken breasts on both sides with salt and pepper.
Prepare Dredging Station:
- In one baking dish, add the flour and season with salt and pepper; mix to combine.
- In a second dish, whisk together the eggs and water.
- In a third dish, combine the bread crumbs, Parmesan, salt, and pepper.
Dredge Chicken:
- One at a time, dip the seasoned chicken breasts into the flour, shaking off any excess.
- Then dip them into the egg mixture, followed by the bread crumb mixture.
- Place each coated chicken breast on the prepared baking sheet.
- Repeat with the remaining chicken breasts.
Cook Chicken:
- Heat two large oven-safe sauté pans over medium heat.
- Add ¼ cup of olive oil to each pan.
- Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 4 minutes.
- Top with Sauce and Cheese:
- Top each chicken breast with pomodoro sauce and sliced mozzarella cheese.
Bake:
- Transfer the sauté pans to the preheated oven and bake for about 5 minutes, or until the internal temperature of the chicken reaches 165ºF and the cheese is melted.
Serve:
- Remove the chicken from the oven and divide among four plates.
- Garnish with additional Parmesan and fresh basil.
- Serve hot.
