Tomato and Green Pepper Pies

Ingredients

  • ½ recipe for Empanada Dough Basic Long Loaf dough, or pizza dough
  • 2 tablespoons vegetable oil
  • ½ pound firm ripe tomatoes thinly sliced
  • 2 medium green bell peppers thinly sliced
  • 1 small onion thinly sliced
  • 2 garlic cloves finely chopped
  • Salt to taste
  • Freshly ground black pepper to taste
  • 3 tablespoons olive oil

Instructions

Prepare the Dough:

  • Follow steps 1 and 2 of the chosen bread dough recipe.
  • Once risen, punch down the dough and knead in 1 tablespoon of vegetable oil, adding flour if needed.
  • Divide the dough into 5 equal pieces and shape them into balls.
  • Roll out each piece into a 6-inch round, approximately ⅛-inch thick.
  • Curl up the edges slightly to create a rim and place them on a baking sheet.

Preheat and Assemble:

  • Preheat the oven to 350°F (175°C).
  • Arrange the thinly sliced tomatoes in overlapping circles on each dough round.
  • Place 3 rings of green bell pepper over the tomatoes on each pie.
  • Scatter the sliced onion and chopped garlic over the pies.
  • Season with salt and freshly ground black pepper.
  • Finally, drizzle each pie with 1 teaspoon of olive oil.

Bake:

  • Bake the pies for approximately 20 minutes or until the vegetables are tender, and the crust turns lightly golden.

Serve:

  • Serve the pies hot, straight from the oven.
