Ingredients
- 1 tablespoon vinegar
- ½ teaspoon ground bittersweet paprika Spanish smoked
- ½ teaspoon dried oregano
- 2 garlic cloves mashed
- ¼ teaspoon crushed red pepper
- Kosher or sea salt
- ¾ pound shark or other mild fish cut into 1-inch chunks
- All-purpose flour or gluten-free flour for dredging
- Olive oil for frying
Instructions
- In a medium bowl, mix together the vinegar, bittersweet paprika, dried oregano, mashed garlic, crushed red pepper, and salt.
- Add the shark chunks and mix to coat thoroughly.
- Cover the bowl and let the shark marinate in the refrigerator overnight.
- Drain and pat the shark dry with paper towels.
- Heat at least 1½ inches of oil in a large skillet over medium-high heat, or use a deep fryer set at 360°F (182°C) until a cube of bread turns light brown in 60 seconds.
- Place all-purpose flour or gluten-free flour in a shallow bowl.
- Dredge all sides of the marinated shark chunks in the flour, ensuring an even coating.
- Carefully place the shark pieces in the hot oil.
- Cook the shark, turning occasionally, until golden brown on all sides.
- Use a slotted spoon to transfer the fried shark to paper towels to drain any excess oil.
