Ingredients

  • 1 tablespoon vinegar
  • ½ teaspoon ground bittersweet paprika Spanish smoked
  • ½ teaspoon dried oregano
  • 2 garlic cloves mashed
  • ¼ teaspoon crushed red pepper
  • Kosher or sea salt
  • ¾ pound shark or other mild fish cut into 1-inch chunks
  • All-purpose flour or gluten-free flour for dredging
  • Olive oil for frying

Instructions

  • In a medium bowl, mix together the vinegar, bittersweet paprika, dried oregano, mashed garlic, crushed red pepper, and salt.
  • Add the shark chunks and mix to coat thoroughly.
  • Cover the bowl and let the shark marinate in the refrigerator overnight.
  • Drain and pat the shark dry with paper towels.
  • Heat at least 1½ inches of oil in a large skillet over medium-high heat, or use a deep fryer set at 360°F (182°C) until a cube of bread turns light brown in 60 seconds.
  • Place all-purpose flour or gluten-free flour in a shallow bowl.
  • Dredge all sides of the marinated shark chunks in the flour, ensuring an even coating.
  • Carefully place the shark pieces in the hot oil.
  • Cook the shark, turning occasionally, until golden brown on all sides.
  • Use a slotted spoon to transfer the fried shark to paper towels to drain any excess oil.
