Crunchy Tortilla-Crusted Haddock

Ingredients
- 2 haddock fillets
- ½ cup tortilla chips crushed
- 2 tablespoons parmesan cheese freshly grated
- 1 teaspoon dried parsley flakes
- 1 egg beaten
- ½ teaspoon coarse sea salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon cayenne pepper
- 2 tablespoons olive oil
Instructions
- Preheat the Air Fryer to 360°F.
- Pat the haddock fillets dry and set them aside.
- In a shallow bowl, mix the crushed tortilla chips with parmesan and parsley flakes until combined.
- In another bowl, whisk the egg with sea salt, black pepper, and cayenne pepper.
- Dip each haddock fillet into the egg mixture, ensuring it’s well coated.
- Then, dredge it in the tortilla chip mixture, pressing gently to adhere.
- Drizzle olive oil over the coated fillets and place them in a lightly greased Air Fryer basket.
- Cook for 11 to 13 minutes until golden brown and cooked through.
- Serve warm.
