Dan Garris’ Chicken Marsala

- Shallow baking dish
- aluminum foil
Ingredients
- 8 chicken breast halves or thighs
- ½ cup seasoned bread crumbs
- ¼ cup Parmesan cheese
- ½ teaspoon garlic powder
- 1 tablespoon oil
- ½ cup water
- ¼ cup melted margarine or butter
- ⅓ cup Marsala wine or sherry
Instructions
- Preheat the oven to 350°F (175°C).
- In a plastic bag, combine the seasoned bread crumbs, Parmesan cheese, and garlic powder.
- Add the chicken pieces to the bag one at a time and shake to coat them evenly with the bread crumb mixture.
- Place the coated chicken pieces in a shallow baking dish.
- Drizzle the oil and water over the chicken in the baking dish.
- Sprinkle the remaining bread crumb mixture over the top of the chicken.
- Drizzle the melted butter or margarine over the chicken.
- Bake the chicken, uncovered, for 45 minutes at 350°F (175°C).
- After 45 minutes, add the Marsala wine or sherry to the baking dish.
- Cover the dish with aluminum foil and continue baking at 325°F (160°C) for an additional 15 minutes.
