Dan Garris’ Chicken Marsala

Equipment

Ingredients

  • 8 chicken breast halves or thighs
  • ½ cup seasoned bread crumbs
  • ¼ cup Parmesan cheese
  • ½ teaspoon garlic powder
  • 1 tablespoon oil
  • ½ cup water
  • ¼ cup melted margarine or butter
  • cup Marsala wine or sherry

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a plastic bag, combine the seasoned bread crumbs, Parmesan cheese, and garlic powder.
  • Add the chicken pieces to the bag one at a time and shake to coat them evenly with the bread crumb mixture.
  • Place the coated chicken pieces in a shallow baking dish.
  • Drizzle the oil and water over the chicken in the baking dish.
  • Sprinkle the remaining bread crumb mixture over the top of the chicken.
  • Drizzle the melted butter or margarine over the chicken.
  • Bake the chicken, uncovered, for 45 minutes at 350°F (175°C).
  • After 45 minutes, add the Marsala wine or sherry to the baking dish.
  • Cover the dish with aluminum foil and continue baking at 325°F (160°C) for an additional 15 minutes.
