Ingredients

  • 1 pound fresh cod fillets
  • 1 can 15 ounces white beans, drained and rinsed
  • 1 medium red onion thinly sliced
  • 2 ripe plum tomatoes diced
  • ½ cup pitted black olives sliced
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh parsley finely chopped
  • Salt and pepper to taste

Instructions

  • Rinse the fresh cod fillets under cold water and pat dry with paper towels.
  • Cut the fillets into bite-sized pieces.
  • In a large mixing bowl, combine the cod pieces, white beans, sliced red onion, diced tomatoes, and sliced olives.
