Fresh Mediterranean Cod and White Bean Salad

Ingredients
- 1 pound fresh cod fillets
- 1 can 15 ounces white beans, drained and rinsed
- 1 medium red onion thinly sliced
- 2 ripe plum tomatoes diced
- ½ cup pitted black olives sliced
- ¼ cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh parsley finely chopped
- Salt and pepper to taste
Instructions
- Rinse the fresh cod fillets under cold water and pat dry with paper towels.
- Cut the fillets into bite-sized pieces.
- In a large mixing bowl, combine the cod pieces, white beans, sliced red onion, diced tomatoes, and sliced olives.
- In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, chopped parsley, salt, and pepper to make the dressing.
