Fried Oyster Plant

Salsify, because of its faint oyster flavor, is commonly known as “oyster plant.” It flourishes in eastern Pennsylvania gardens. One grandmother, who recalls that they “always had it in the garden,” explained that salsify makes good soup, also. “We sliced it like a carrot, cooked it soft, and added butter, salt, pepper, and milk.”

Ingredients

  • oyster plant
  • salt
  • egg beaten
  • cracker crumbs
  • butter or margarine

Instructions

  • Scrub oyster plant.
  • Steam in water to which ½ tsp.
  • salt has been added.
  • When soft, slice it and dip individual slices in egg, then in cracker crumbs.
  • Fry in butter or margarine, turning to brown evenly on both sides
