Salsify, because of its faint oyster flavor, is commonly known as “oyster plant.” It flourishes in eastern Pennsylvania gardens.
One grandmother, who recalls that they “always had it in the garden,” explained that salsify makes good soup, also. “We sliced it like a carrot, cooked it soft, and added butter, salt, pepper, and milk.”
