  • 1 ¾ cups whole wheat flour
  • 1 cup rice or soy milk
  • ¼ cup water
  • 1 package 2 1/4 teaspoons active dry yeast
  • 1 tablespoon oil such as vegetable oil or olive oil
  • 1 tablespoon molasses
  • ½ cup granola
  • ½ cup raisins
  • ½ cup sunflower seeds
  • 2 tablespoons grated orange rind

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • In a small saucepan, heat the rice or soy milk and water until warm but not boiling.
  • Remove from heat.
  • In a large mixing bowl, combine the whole wheat flour, warm rice or soy milk mixture, yeast, oil, and molasses.
  • Mix well until a smooth dough forms.
  • Fold in the granola, raisins, sunflower seeds, and grated orange rind until evenly distributed throughout the dough.
  • Pour the dough into an oiled loaf pan, spreading it evenly.
  • Allow the dough to rise in a warm place for about 30 minutes, or until it doubles in size.
  • Once the dough has risen, place the loaf pan in the preheated oven.
  • Bake the bread for 35-40 minutes, or until it is golden brown on top and sounds hollow when tapped on the bottom.
  • Remove the bread from the oven and let it cool in the loaf pan for a few minutes before transferring it to a wire rack to cool completely.
