Granola Molasses Bread

- 1 ¾ cups whole wheat flour
- 1 cup rice or soy milk
- ¼ cup water
- 1 package 2 1/4 teaspoons active dry yeast
- 1 tablespoon oil such as vegetable oil or olive oil
- 1 tablespoon molasses
- ½ cup granola
- ½ cup raisins
- ½ cup sunflower seeds
- 2 tablespoons grated orange rind
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In a small saucepan, heat the rice or soy milk and water until warm but not boiling.
- Remove from heat.
- In a large mixing bowl, combine the whole wheat flour, warm rice or soy milk mixture, yeast, oil, and molasses.
- Mix well until a smooth dough forms.
- Fold in the granola, raisins, sunflower seeds, and grated orange rind until evenly distributed throughout the dough.
- Pour the dough into an oiled loaf pan, spreading it evenly.
- Allow the dough to rise in a warm place for about 30 minutes, or until it doubles in size.
- Once the dough has risen, place the loaf pan in the preheated oven.
- Bake the bread for 35-40 minutes, or until it is golden brown on top and sounds hollow when tapped on the bottom.
- Remove the bread from the oven and let it cool in the loaf pan for a few minutes before transferring it to a wire rack to cool completely.
