Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a small saucepan, heat the rice or soy milk and water until warm but not boiling.
Remove from heat.
In a large mixing bowl, combine the whole wheat flour, warm rice or soy milk mixture, yeast, oil, and molasses.
Mix well until a smooth dough forms.
Fold in the granola, raisins, sunflower seeds, and grated orange rind until evenly distributed throughout the dough.
Pour the dough into an oiled loaf pan, spreading it evenly.
Allow the dough to rise in a warm place for about 30 minutes, or until it doubles in size.
Once the dough has risen, place the loaf pan in the preheated oven.
Bake the bread for 35-40 minutes, or until it is golden brown on top and sounds hollow when tapped on the bottom.
Remove the bread from the oven and let it cool in the loaf pan for a few minutes before transferring it to a wire rack to cool completely.
Slice and serve this Granola Molasses Bread warm with butter or your favorite spread.
