Ingredients

Makes 6 servings

    Prep: 15 min., Cook: 12 min., Bake: 23 min.

    • 3 tablespoons olive oil divided
    • ½ cup chopped onion
    • 3 garlic cloves minced
    • 1 28-ounce can crushed tomatoes, undrained
    • ½ cup dry white wine
    • ½ cup chopped fresh parsley
    • ¼ cup capers drained
    • 1 teaspoon chopped fresh rosemary
    • 1 teaspoon chopped fresh oregano
    • ¼ teaspoon dried crushed red pepper
    • 6 8-ounce grouper fillets (about ¾ inch thick)
    • 2 tablespoons dry white wine
    • 2 4-ounce packages crumbled feta cheese

    Instructions

    • Heat 2 tablespoons oil in a large skillet over medium-high heat.
    • Add onion and garlic, and sauté 2 minutes.
    • Add tomatoes and next 6 ingredients to skillet.
    • Bring to a boil; reduce heat, and simmer, uncovered, 10 minutes.
    • Pour remaining oil into a 15- x 10-inch jelly-roll pan, and tilt to coat bottom.
    • Place fish fillets in a single layer on pan.
    • Pour tomato mixture over fish.
    • Bake, uncovered, at 450° for 15 minutes.
    • Drizzle with white wine.
    • Sprinkle with cheese, and cook 8 more minutes or until cheese begins to melt.
