Homemade Pork Tenderloin Tacos
Ingredients
- 2 teaspoons oil
- 1 pound pork tenderloin cubed
- 1 teaspoon ground cumin
- 2 cloves garlic minced
- 1 cup green or red salsa
- Optional: 1/2 cup fresh cilantro chopped
- 8 10- inch corn tortillas warmed
- Garnish:
- Shredded lettuce diced tomatoes, sliced avocado, sliced black olives, sour cream, shredded Cheddar cheese
Instructions
- In a skillet over medium-high heat, heat the oil.
- Add the cubed pork and ground cumin, cooking until the pork is golden on all sides and is no longer pink in the center, about 8 to 10 minutes.
- Add minced garlic and cook for an additional minute.
- Drain any excess liquid.
- Stir in the salsa and heat through.
- If using cilantro, stir it in as well.
- Using two forks, shred the pork in the skillet.
- Fill the warmed tortillas with the pork mixture.
- Garnish the Homemade Pork Tenderloin Tacos with shredded lettuce, diced tomatoes, sliced avocado, sliced black olives, sour cream, and shredded Cheddar cheese, as desired.
