Jackfruit “Fish” Fritters

Jackfruit is neutral enough to take on the flavours that you add to it, while the nori and Cajun seasonings trick the taste buds into reminding you of fish flavours.

Ingredients

  • 570 grams canned jackfruit drained and chopped
  • 1 flax egg see note
  • ¾ tablespoon Dijon mustard
  • ¾ tablespoon vegan mayonnaise
  • ¾ tablespoon prepared horseradish
  • 1 ½ tablespoons peeled and grated brown onion
  • 1 ½ tablespoons chopped fresh parsley
  • 1 ½ tablespoons chopped nori
  • 1 ½ tablespoons almond flour
  • ¾ tablespoon Cajun seasoning
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 2 lemon wedges

Instructions

  • Combine all ingredients except lemon wedges in a medium bowl.
  • Refrigerate covered 15 minutes.
  • Preheat air fryer at 180°C for 3 minutes.
  • Cut a piece of baking paper to fit bottom of air fryer basket.
  • Form chilled mixture into 12 balls, approximately 2 tablespoons each.
  • Place six balls in ungreased air fryer basket.
  • Cook for 10 minutes.
  • Transfer to a large plate and repeat cooking with remaining balls.
  • Serve warm garnished with lemon wedges.

What Is A Flax Egg?
There are many vegan and vegetarian egg substitutions on the market, but one that is easy to make in your kitchen is 1 ½ tablespoons ground flaxseed combined with 4 ½ tablespoons water. Let it set for about 15 minutes before using in a recipe. This combination equals one large egg.
