Jamaican Hot Wings

- saucepot 2-quart
Ingredients
- 1 pound Butter
- 8 ounces Jamaican Jerk Spice
- ½ ounce Tabasco Sauce
- 8 ounces Tomato Juice
- 8 ounces Unbleached Flour
- 5 pounds Chicken Wings or Drumettes fresh (not frozen)
- Oil for Frying
Instructions
- In a 2-quart saucepot, melt the butter over low heat.
- Add the Jamaican Jerk Spice, Tabasco Sauce, and tomato juice.
- Blend the mixture well and set it aside.
- Rinse the chicken wings under cold running water and pat them dry with paper towels.
- Dust the wings with flour.
- In a heavy pot or skillet, heat about 2 inches of oil for frying.
- Deep fry the wings until they are cooked through and have a crispy texture.
- Place the cooked wings in the prepared sauce mixture, allowing them to marinate for a few minutes.
- Drain off any excess liquid.
- Serve the Jamaican Hot Wings immediately.
