Jamaican Jerk Chicken Wings
Ingredients
For the Marinade:
- 1 Onion chopped
- ⅔ cup Scallions chopped
- 2 Garlic cloves
- ½ teaspoon Thyme crumbled
- 1 ½ teaspoons Salt
- 1 ½ teaspoons Ground allspice
- ¼ teaspoon Nutmeg grated
- ½ teaspoon Cinnamon
- ¼ cup Jalapeno pepper minced
- 1 teaspoon Black pepper
- 6 drops Tabasco sauce
- 2 tablespoons Soy sauce
- ¼ cup Vegetable oil
To Add to Marinade:
- 18 Chicken wings trimmed
Instructions
Prepare the Marinade:
- In a food processor or blender, puree all marinade ingredients (onion, scallions, garlic, thyme, salt, allspice, nutmeg, cinnamon, jalapeno pepper, black pepper, Tabasco sauce, soy sauce, vegetable oil).
Marinate the Wings:
- In a large shallow dish, arrange the chicken wings in a single layer.
- Spoon the marinade over the wings, rubbing it in.
- You can use rubber gloves for this step.
- Let the wings marinate, covered and chilled, turning them once.
- Marinate for at least 1 hour or, preferably, overnight.
Baking:
- Preheat the oven to 450°F (230°C).
- Arrange the marinated wings in one layer on an oiled rack set over a foil-lined roasting pan.
- Spoon additional marinade over the wings.
- Bake in the upper third of the preheated oven for 30-35 minutes or until the wings are cooked through.
Serve:
- Once cooked, serve the Jamaican Jerk Chicken Wings hot.
