Jammy Oat Fruit Bars
Equipment
- 5″ x 7″ baking dish

Ingredients
- 1 ½ cups rolled oats
- ½ cup whole wheat flour
- ¾ cup unsweetened coconut
- ½ cup fruit juice such as apple or orange
- 1 ½ cups all-fruit jam any flavor of your choice
Instructions
Preheat Oven:
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Grease a 5″ x 7″ baking dish with oil or line it with parchment paper.
Mix Dry Ingredients:
- In a mixing bowl, combine the rolled oats, whole wheat flour, and unsweetened coconut.
- Mix well until evenly combined.
Add Fruit Juice:
- Pour the fruit juice over the dry ingredients.
- Stir gently until the mixture is moistened and forms a crumbly texture.
Layer the Bars:
- Press slightly more than half of the crumb mixture into the bottom of the prepared baking dish to form the bottom crust layer.
Spread Jam:
- Spread the all-fruit jam evenly over the crust layer in the baking dish.
Top with Remaining Crumbs:
- Sprinkle the remaining crumb mixture evenly over the jam layer, covering it completely.
Bake:
- Place the baking dish in the preheated oven and bake for approximately 40 minutes, or until the top is golden brown.
Cool and Slice:
- Allow the bars to cool in the baking dish for a few minutes before slicing them into squares.
Serve:
- Once cooled completely, carefully remove the squares from the baking dish and serve.
