Mediterranean Veggie Wrap with Chickpea Spread

Ingredients

  • 1 whole wheat tortilla or gluten-free tortilla
  • 1 to 2 tablespoons Chickpea Veggie Dip see recipe above
  • 1 carrot grated
  • ½ tomato thinly sliced
  • Handful of salad greens lettuce, spinach, arugula, etc.

Instructions

  • Lay the whole wheat tortilla flat on a clean surface.
  • Spread 1 to 2 tablespoons of Chickpea Veggie Dip evenly over the tortilla, leaving a small border around the edges.
  • Line the center of the tortilla with a handful of salad greens.
  • Arrange the grated carrot and thinly sliced tomato on top of the salad greens.
  • Carefully roll up the tortilla, starting from one side and rolling towards the other, to enclose the filling.
  • Slice the veggie wrap in half diagonally, if desired, and serve immediately.
  • Enjoy this delicious and nutritious Mediterranean veggie wrap as a satisfying lunch or light meal!
