New Potatoes and Peas
This is a springtime feast. Some cooks favor only a brown butter dressing; others prefer a white sauce.
New potatoes may be cooked in their papery skins, or they may be gently scraped with a knife (not a potato peeler) so that only the thin shell is removed.
Ingrediënten
- 12 small new potatoes
- 3 cups fresh peas
- 1 tsp. salt
- brown butter or a white sauce
Instructies
- Cook potatoes in a small amount of water until almost soft.
- Add peas and cook just until they and the potatoes are tender.
- Salt.
- Spoon into serving dish and pour brown butter or white sauce over.
