New Potatoes and Peas

This is a springtime feast. Some cooks favor only a brown butter dressing; others prefer a white sauce. New potatoes may be cooked in their papery skins, or they may be gently scraped with a knife (not a potato peeler) so that only the thin shell is removed.

Ingredients

  • 12 small new potatoes
  • 3 cups fresh peas
  • 1 tsp. salt
  • brown butter or a white sauce

Instructions

  • Cook potatoes in a small amount of water until almost soft.
  • Add peas and cook just until they and the potatoes are tender.
  • Salt.
  • Spoon into serving dish and pour brown butter or white sauce over.
