Nutty Cauliflower Salad

Ingredients
- 1 cauliflower broken into florets
- 1 teaspoon mustard seeds
- Small bunch of cilantro chopped
- Juice of 2 limes
- ½ teaspoon clear honey
- 1 tablespoon olive oil
- 1 tablespoon black sesame seeds
- 30 g 1 oz dry-roasted peanuts, lightly crushed
- Salt to taste
Instructions
- Steam the cauliflower florets for 3-4 minutes until just tender.
- Set aside to cool slightly.
- In a dry nonstick frying pan, toast the mustard seeds until they start to pop.
- Remove from heat and set aside.
- In a small bowl, whisk together lime juice, honey, and olive oil to make the dressing.
- In a large mixing bowl, combine the steamed cauliflower, chopped cilantro, toasted mustard seeds, sesame seeds, and crushed peanuts.
- Pour the dressing over the cauliflower mixture and toss until well coated.
- Season with salt to taste.
- Serve immediately as a salad or chilled as a refreshing side dish.
