Nutty Cauliflower Salad

Ingredients

  • 1 cauliflower broken into florets
  • 1 teaspoon mustard seeds
  • Small bunch of cilantro chopped
  • Juice of 2 limes
  • ½ teaspoon clear honey
  • 1 tablespoon olive oil
  • 1 tablespoon black sesame seeds
  • 30 g 1 oz dry-roasted peanuts, lightly crushed
  • Salt to taste

Instructions

  • Steam the cauliflower florets for 3-4 minutes until just tender.
  • Set aside to cool slightly.
  • In a dry nonstick frying pan, toast the mustard seeds until they start to pop.
  • Remove from heat and set aside.
  • In a small bowl, whisk together lime juice, honey, and olive oil to make the dressing.
  • In a large mixing bowl, combine the steamed cauliflower, chopped cilantro, toasted mustard seeds, sesame seeds, and crushed peanuts.
  • Pour the dressing over the cauliflower mixture and toss until well coated.
  • Season with salt to taste.
  • Serve immediately as a salad or chilled as a refreshing side dish.
