Ingredients

- 1 ⅔ cups very warm water
- 3 tablespoons honey
- 1 cup rolled oats
- 1 cup almonds
- 3 teaspoons baking powder
- 2 ⅓ cups whole wheat flour

- Ingredients for Topping:
- ½ cup chopped almonds
- 1 tablespoon maple syrup
- 2 cups water
- 8 large strawberries
- 1 frozen banana
Instructions
Prepare Shortcake Biscuits:
- Preheat the oven to 400°F (200°C).
- In a bowl, mix honey with very warm water until dissolved.
- Set aside.
- In a food processor or blender, grind rolled oats and almonds into a fine meal.
- In a mixing bowl, combine the dry ingredients: oat-almond meal, baking powder, and whole wheat flour.
- Pour in the honey and water mixture, and stir until slightly moistened.
- Drop spoonfuls of the mixture onto a nonstick baking sheet.
- Bake in the preheated oven for 15 to 20 minutes or until golden brown.
- Once baked, let the biscuits cool on a wire rack.
Prepare Topping:
- In a blender, combine chopped almonds, maple syrup, water, strawberries, and frozen banana.
- Blend until smooth and creamy.
Assembly:
- To serve, place a biscuit in a bowl.
- Top the biscuit with sliced strawberries.
- Pour the creamy topping over the strawberries and biscuit.
