  • 1 cup rolled oats
  • 1 cup almonds

  • 2 cups water
  • 8 large strawberries
  • 1 frozen banana

Instructions

Prepare Shortcake Biscuits:

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix honey with very warm water until dissolved.
  • Set aside.
  • In a food processor or blender, grind rolled oats and almonds into a fine meal.
  • In a mixing bowl, combine the dry ingredients: oat-almond meal, baking powder, and whole wheat flour.
  • Pour in the honey and water mixture, and stir until slightly moistened.
  • Drop spoonfuls of the mixture onto a nonstick baking sheet.
  • Bake in the preheated oven for 15 to 20 minutes or until golden brown.
  • Once baked, let the biscuits cool on a wire rack.

Prepare Topping:

  • In a blender, combine chopped almonds, maple syrup, water, strawberries, and frozen banana.
  • Blend until smooth and creamy.

Assembly:

  • To serve, place a biscuit in a bowl.
  • Top the biscuit with sliced strawberries.
  • Pour the creamy topping over the strawberries and biscuit.
  • Garnish with additional sliced strawberries if desired.
