Instructions
Prepare Shortcake Biscuits:
Preheat the oven to 400°F (200°C).
In a bowl, mix honey with very warm water until dissolved.
Set aside.
In a food processor or blender, grind rolled oats and almonds into a fine meal.
In a mixing bowl, combine the dry ingredients: oat-almond meal, baking powder, and whole wheat flour.
Pour in the honey and water mixture, and stir until slightly moistened.
Drop spoonfuls of the mixture onto a nonstick baking sheet.
Bake in the preheated oven for 15 to 20 minutes or until golden brown.
Once baked, let the biscuits cool on a wire rack.
Prepare Topping:
In a blender, combine chopped almonds, maple syrup, water, strawberries, and frozen banana.
Blend until smooth and creamy.
Assembly:
To serve, place a biscuit in a bowl.
Top the biscuit with sliced strawberries.
Pour the creamy topping over the strawberries and biscuit.
Garnish with additional sliced strawberries if desired.
