Equipment

  • aluminum foil
  • baking dish
  • baking sheet
  • Food-safe cedar plank
  • Shallow baking dish or pan
  • Tongs

Ingredients

  • 1 block extra-firm tofu drained and pressed
  • 2 tablespoons tamari or soy sauce
  • 2 tablespoons liquid smoke
  • 6 to 10 pieces cedar paper
  • 1 cup water

Instructions

  • Preheat the oven to 250°F (125°C, or gas mark ½).
  • For plank-smoked tofu: Soak the plank in warm water for about 1 hour.
  • Place the tofu steaks evenly spaced on the plank.
  • Cover with aluminum foil to create a steam tent.
  • Bake for 2 hours.
  • For paper-smoked tofu: Soak the papers in warm water for 10 to 15 minutes.
  • Wrap each tofu steak in paper, place seam side down on the oven rack or a baking sheet.
  • Bake for 2 hours.
  • For liquid-smoked tofu: Mix together the water, tamari, and liquid smoke in a shallow baking dish.
  • Place tofu steaks in the dish and bake, uncovered, for 2 hours.
