Oven-Smoked Tofu, Three Ways

- Shallow baking dish or pan

Ingredients
- 1 block extra-firm tofu drained and pressed
- 2 tablespoons tamari or soy sauce
- 2 tablespoons liquid smoke
- 6 to 10 pieces cedar paper
- 1 cup water
Instructions
- Preheat the oven to 250°F (125°C, or gas mark ½).
- For plank-smoked tofu: Soak the plank in warm water for about 1 hour.
- Place the tofu steaks evenly spaced on the plank.
- Cover with aluminum foil to create a steam tent.
- Bake for 2 hours.
- For paper-smoked tofu: Soak the papers in warm water for 10 to 15 minutes.
- Wrap each tofu steak in paper, place seam side down on the oven rack or a baking sheet.
- Bake for 2 hours.
- For liquid-smoked tofu: Mix together the water, tamari, and liquid smoke in a shallow baking dish.
- Place tofu steaks in the dish and bake, uncovered, for 2 hours.
