  • 2 pounds of Idaho potatoes
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons melted butter
  • 2 teaspoons smoked paprika
  • Salt to taste
  • ½ cup finely grated Parmesan optional, for serving
  • Garlic mayonnaise for serving

Instructions

  • Preheat the air fryer to 400°F for 3 minutes.
  • Cut the Idaho potatoes into wedges.
  • In a large bowl, combine extra virgin olive oil, melted butter, and smoked paprika.
  • Season with salt and toss the potato wedges in the mixture until evenly coated.
  • Keep the air fryer temperature at 400°F and set the timer for 15-20 minutes.
  • Cook the wedges, turning them once halfway through, until they are golden and cooked.

Notes / Tips / Wine Advice:

Optionally, serve the wedges scattered with finely grated Parmesan and with garlic mayonnaise on the side.
