Red Pepper and Cheese Egg Cups

Ingredients
- 1 tbsp chopped cilantro
- 1 cup diced red pepper
- 4 tbsp half and half
- Salt
- 4 large free-range eggs
- 1 cup shredded cheese
- Pepper
Instructions
- Preheat your air fryer to 300°F (150°C) and grease four ramekins.
- In a medium bowl, whisk the eggs until well beaten.
- Add the diced red pepper, half of the shredded cheese, half and half, chopped cilantro, salt, and pepper to the eggs.
- Stir well to combine.
- Divide the egg mixture evenly between the greased ramekins.
- Place the ramekins in the air fryer.
- Cook for 15 minutes, or until the egg cups are set and lightly golden on top.
- Remove from the air fryer and sprinkle the remaining shredded cheese on top of each egg cup.
- Serve hot and enjoy!
