Preheat your air fryer to 300°F (150°C) and grease four ramekins.
In a medium bowl, whisk the eggs until well beaten.
Add the diced red pepper, half of the shredded cheese, half and half, chopped cilantro, salt, and pepper to the eggs.
Stir well to combine.
Divide the egg mixture evenly between the greased ramekins.
Place the ramekins in the air fryer.
Cook for 15 minutes, or until the egg cups are set and lightly golden on top.
Remove from the air fryer and sprinkle the remaining shredded cheese on top of each egg cup.
