Savory Skillet Beef and Potato Goulash

Ingredients

  • 2 pounds ground beef
  • 1 can 10 ounces diced tomatoes with green chiles
  • 6 baking potatoes peeled and diced
  • 1 can 15 ounces tomato sauce
  • 1 can 15.25 ounces corn, drained
  • 1 can 14.5 ounces ranch-style beans
  • Salt and pepper to taste

Instructions

  • In a large skillet or Dutch oven over medium heat, brown the ground beef until fully cooked.
  • Drain any excess fat.
  • Add the diced tomatoes with green chiles (with their juice), diced baking potatoes, tomato sauce, drained corn, and ranch-style beans to the skillet.
  • Season the mixture with salt and pepper to taste.
  • Reduce the heat, cover the skillet, and simmer until the potatoes are tender and the mixture has thickened, approximately 45 minutes.
  • Stir occasionally to ensure even cooking and flavor distribution.
