Spanish Pomegranate Coleslaw

Ingredients

  • 4 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove finely chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoon finely chopped scallion
  • Kosher or sea salt to taste
  • Freshly ground black pepper to taste
  • 1 small head green cabbage finely shredded
  • 4 tablespoons pomegranate seeds

Instructions

  • In a small bowl, whisk together the olive oil, red wine vinegar, chopped garlic, Dijon mustard, scallions, salt, and pepper to create the dressing.
  • In a large mixing bowl, combine the finely shredded green cabbage and pomegranate seeds.
  • Pour the dressing over the cabbage and pomegranate mixture.
  • Toss until well-coated.
  • Allow the flavors to mingle at room temperature before serving.
