Spanish Pomegranate Coleslaw
Ingredients
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 garlic clove finely chopped
- 1 teaspoon Dijon mustard
- 1 tablespoon finely chopped scallion
- Kosher or sea salt to taste
- Freshly ground black pepper to taste
- 1 small head green cabbage finely shredded
- 4 tablespoons pomegranate seeds
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, chopped garlic, Dijon mustard, scallions, salt, and pepper to create the dressing.
- In a large mixing bowl, combine the finely shredded green cabbage and pomegranate seeds.
- Pour the dressing over the cabbage and pomegranate mixture.
- Toss until well-coated.
- Allow the flavors to mingle at room temperature before serving.
