Spiced Lentil Harvest Soup

Ingredients
- 1 ½ tablespoons olive oil
- 1 large onion chopped
- 1 carrot peeled and diced
- 1 red pepper diced
- 1 teaspoon cumin
- 1 cup lentils any variety, rinsed and drained
- 4 cups Homemade Vegetable Broth
- 1 ½ cups diced tomatoes fresh or canned
- 1 cup fresh corn kernels cut off the cob
- 1 tablespoon Bragg Liquid Aminos
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, diced carrot, and diced red pepper.
- Sauté until the onion is tender, about 5 minutes.
- Stir in the cumin, blending it with the vegetables for about 1 minute until fragrant.
- Add the rinsed and drained lentils, Homemade Vegetable Broth, diced tomatoes, fresh corn kernels, and Bragg Liquid Aminos to the pot.
- Stir to combine.
- Cover the pot and bring the soup to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let the soup simmer for about 30 minutes, or until the lentils are tender.
- Taste the soup and adjust seasoning if needed.
- Serve the spiced lentil harvest soup hot, garnished with fresh parsley or cilantro if desired.
