Ingredients

  • 1 ½ tablespoons olive oil
  • 1 large onion chopped
  • 1 carrot peeled and diced
  • 1 red pepper diced
  • 1 teaspoon cumin
  • 1 cup lentils any variety, rinsed and drained
  • 4 cups Homemade Vegetable Broth
  • 1 ½ cups diced tomatoes fresh or canned
  • 1 cup fresh corn kernels cut off the cob
  • 1 tablespoon Bragg Liquid Aminos

Instructions

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion, diced carrot, and diced red pepper.
  • Sauté until the onion is tender, about 5 minutes.
  • Stir in the cumin, blending it with the vegetables for about 1 minute until fragrant.
  • Add the rinsed and drained lentils, Homemade Vegetable Broth, diced tomatoes, fresh corn kernels, and Bragg Liquid Aminos to the pot.
  • Stir to combine.
  • Cover the pot and bring the soup to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let the soup simmer for about 30 minutes, or until the lentils are tender.
  • Taste the soup and adjust seasoning if needed.
  • Serve the spiced lentil harvest soup hot, garnished with fresh parsley or cilantro if desired.
