Spicy Air-Fried Cauliflower Popcorn

- 2 tablespoons of flaxseed meal
- ¼ cup of Dijon mustard
- 2 tablespoons of hot sauce e.g., sriracha, Mexican hot sauce, or Tabasco
- 1 and 3/4 cups of all-purpose flour
- 2 teaspoons of onion powder
- 2 teaspoons of garlic powder
- 2 teaspoons of smoked paprika
- ½ teaspoon of cayenne pepper
- ½ teaspoon of ground white pepper
- 1 medium cauliflower approximately 3 pounds
- Olive oil cooking spray
- Additional hot sauce and lemon wedges for serving
Instructions
- In a large bowl, combine the flaxseed meal with 1/4 cup of water and let it stand for 5 minutes or until it thickens.
- Add the Dijon mustard and hot sauce, then stir to combine.
- In a second large bowl, combine the flour, onion powder, garlic powder, and spices.
- Season with salt.
- Cut the cauliflower into 1-inch florets.
- Preheat a 5- or 6-quart air fryer to 350°F for 3 minutes.
- Add the cauliflower florets to the flaxseed mixture and stir to coat.
- Work in batches to toss the cauliflower in the flour mixture to ensure even coating.
- Generously spray with olive oil.
- Carefully pull out the air fryer pan and basket, place half of the coated cauliflower in the basket, and slide the pan and basket back into the appliance.
- Keep the temperature set at 350°F and set the timer for 10 minutes.
- Cook until the cauliflower is golden.
- Transfer the cauliflower popcorn to a bowl, season with salt, and cover to keep it warm.
- Repeat the cooking process with the remaining coated cauliflower.
- Serve the crispy cauliflower popcorn with extra hot sauce and lemon wedges.
