Instructions
In a large bowl, combine the flaxseed meal with 1/4 cup of water and let it stand for 5 minutes or until it thickens.
Add the Dijon mustard and hot sauce, then stir to combine.
In a second large bowl, combine the flour, onion powder, garlic powder, and spices.
Season with salt.
Cut the cauliflower into 1-inch florets.
Preheat a 5- or 6-quart air fryer to 350°F for 3 minutes.
Add the cauliflower florets to the flaxseed mixture and stir to coat.
Work in batches to toss the cauliflower in the flour mixture to ensure even coating.
Generously spray with olive oil.
Carefully pull out the air fryer pan and basket, place half of the coated cauliflower in the basket, and slide the pan and basket back into the appliance.
Keep the temperature set at 350°F and set the timer for 10 minutes.
Cook until the cauliflower is golden.
Transfer the cauliflower popcorn to a bowl, season with salt, and cover to keep it warm.
Repeat the cooking process with the remaining coated cauliflower.
Serve the crispy cauliflower popcorn with extra hot sauce and lemon wedges.
