Ingredients
- 4 large sweet potatoes baked
- 2 large slices of pineapple diced
- 2 tablespoons strawberry all-fruit jelly
- 2 tablespoons apple juice
- Large handful of raisins
- Non-dairy butter substitute
Instructions
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Lightly grease a baking dish with non-dairy butter substitute.
- Peel the baked sweet potatoes and place them in a large mixing bowl.
- Mash the sweet potatoes using a potato masher or fork until smooth.
- Add the diced pineapple and raisins to the mashed sweet potatoes in the mixing bowl.
- Stir until well combined.
- In a small bowl, combine the strawberry all-fruit jelly and apple juice.
- Microwave for 20-30 seconds to soften the jelly, then stir until smooth.
- Pour the jelly mixture over the sweet potato mixture in the mixing bowl.
- Stir until all ingredients are evenly coated.
- Transfer the sweet potato mixture to the greased baking dish, spreading it out into an even layer.
- Bake in the preheated oven for 15 to 20 minutes, or until heated through and slightly bubbly around the edges.
