  • 4 large sweet potatoes baked
  • 2 large slices of pineapple diced
  • 2 tablespoons strawberry all-fruit jelly
  • 2 tablespoons apple juice
  • Large handful of raisins
  • Non-dairy butter substitute

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  • Lightly grease a baking dish with non-dairy butter substitute.
  • Peel the baked sweet potatoes and place them in a large mixing bowl.
  • Mash the sweet potatoes using a potato masher or fork until smooth.
  • Add the diced pineapple and raisins to the mashed sweet potatoes in the mixing bowl.
  • Stir until well combined.
  • In a small bowl, combine the strawberry all-fruit jelly and apple juice.
  • Microwave for 20-30 seconds to soften the jelly, then stir until smooth.
  • Pour the jelly mixture over the sweet potato mixture in the mixing bowl.
  • Stir until all ingredients are evenly coated.
  • Transfer the sweet potato mixture to the greased baking dish, spreading it out into an even layer.
  • Bake in the preheated oven for 15 to 20 minutes, or until heated through and slightly bubbly around the edges.
  • Remove from the oven and top the baked sweet potato surprise with dollops of non-dairy butter substitute.
