Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
Lightly grease a baking dish with non-dairy butter substitute.
Peel the baked sweet potatoes and place them in a large mixing bowl.
Mash the sweet potatoes using a potato masher or fork until smooth.
Add the diced pineapple and raisins to the mashed sweet potatoes in the mixing bowl.
Stir until well combined.
In a small bowl, combine the strawberry all-fruit jelly and apple juice.
Microwave for 20-30 seconds to soften the jelly, then stir until smooth.
Pour the jelly mixture over the sweet potato mixture in the mixing bowl.
Stir until all ingredients are evenly coated.
Transfer the sweet potato mixture to the greased baking dish, spreading it out into an even layer.
Bake in the preheated oven for 15 to 20 minutes, or until heated through and slightly bubbly around the edges.
Remove from the oven and top the baked sweet potato surprise with dollops of non-dairy butter substitute.
Serve hot as a delightful side dish or dessert, enjoying the tropical flavors and sweet surprises in every bite!
