Vibrant Veggie Bean Fiesta

- 1 large onion chopped
- 2 cans vegetable broth or substitute with more vegetables and water
- 2 cloves garlic minced
- 3 tablespoons chili powder
- 1 ½ teaspoons ground cumin
- ½ teaspoon dried oregano
- 1 pound carrots sliced
- 1 pound red potatoes cubed
- 2 cans 14 1/2 oz each diced tomatoes, undrained OR 3 cups diced fresh tomatoes
- 1 can 15 oz black beans, rinsed and drained
- 1 can 15 oz kidney beans, rinsed and drained
- 1 can 15 oz garbanzo beans, rinsed and drained
- 2 ½ cups water
Instructions
- In a Dutch oven, simmer chopped onion in vegetable broth for 5 minutes.
- Add minced garlic, chili powder, ground cumin, dried oregano, sliced carrots, cubed red potatoes, and diced tomatoes.
- Bring to a boil.
- Reduce heat, cover, and simmer for 10 minutes.
- Add black beans, kidney beans, garbanzo beans, and water.
- Cover and simmer for an additional 20 minutes.
