  • 1 large onion chopped
  • 2 cans vegetable broth or substitute with more vegetables and water
  • 2 cloves garlic minced
  • 3 tablespoons chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon dried oregano
  • 1 pound carrots sliced
  • 1 pound red potatoes cubed
  • 2 cans 14 1/2 oz each diced tomatoes, undrained OR 3 cups diced fresh tomatoes
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz kidney beans, rinsed and drained
  • 1 can 15 oz garbanzo beans, rinsed and drained
  • 2 ½ cups water

Instructions

  • In a Dutch oven, simmer chopped onion in vegetable broth for 5 minutes.
  • Add minced garlic, chili powder, ground cumin, dried oregano, sliced carrots, cubed red potatoes, and diced tomatoes.
  • Bring to a boil.
  • Reduce heat, cover, and simmer for 10 minutes.
  • Add black beans, kidney beans, garbanzo beans, and water.
  • Cover and simmer for an additional 20 minutes.
