Red Lentil And Cauliflower Soup
The arrival of cooler weather makes me want to cook nutritious, hearty soups. The
coconut milk perfectly flavors this Indian inspired soup.
Ingrediënten
- 2 tbsp. vegetable oil
- 1 onion chopped
- 3 cloves garlic chopped
- 3 sliced carrots
- 1 cup red lentils
- 1 cauliflower into florets
- 4 cups chicken broth
- 1 tsp. ground coriander
- 1 tsp. of turmeric
- 1 small piece of fresh ginger chopped
- 1 tsp. chopped lemon grass
- Salt and pepper
- 1 cup coconut milk
Instructies
- In a saucepan, heat the oil and saute the chopped onions for a couple minutes.
- Add chopped garlic and chopped ginger and cook for 2 minutes.
- Add sliced carrots, cauliflower florets, lentils, chicken broth and spices.
- Simmer for 30 minutes.
- Puree in a blender, adding the coconut milk.
- Add salt and pepper to taste.
