Red Lentil And Cauliflower Soup

The arrival of cooler weather makes me want to cook nutritious, hearty soups. The coconut milk perfectly flavors this Indian inspired soup.

Equipment

Ingrediënten

  • 2 tbsp. vegetable oil
  • 1 onion chopped
  • 3 cloves garlic chopped
  • 3 sliced carrots
  • 1 cup red lentils
  • 1 cauliflower into florets
  • 4 cups chicken broth
  • 1 tsp. ground coriander
  • 1 tsp. of turmeric
  • 1 small piece of fresh ginger chopped
  • 1 tsp. chopped lemon grass
  • Salt and pepper
  • 1 cup coconut milk

Instructies

  • In a saucepan, heat the oil and saute the chopped onions for a couple minutes.
  • Add chopped garlic and chopped ginger and cook for 2 minutes.
  • Add sliced carrots, cauliflower florets, lentils, chicken broth and spices.
  • Simmer for 30 minutes.
  • Puree in a blender, adding the coconut milk.
  • Add salt and pepper to taste.
