  • 2 zucchini
  • 2 yellow squash
  • 1 large red bell pepper chopped
  • 1 medium-size red onion chopped
  • 5 cups cooked long-grain rice
  • ¾ cup mayonnaise
  • cup buttermilk
  • 2 tablespoons Dijon mustard
  • 2 tablespoons white vinegar
  • teaspoons salt
  • ½ teaspoon black pepper

Instructies

  • Cut zucchini and yellow squash in half lengthwise; cut into slices.
  • Stir together vegetables, rice, and remaining ingredients; cover and chill 8 hours.
