How to bake focaccia, please, see the previous recipe.
After baking your focaccia, lower your oven temperature to 3750 F.
Mix cranberries + maple syrup + honey + onion + thyme + salt in an 8″
x 8″ baking dish.
Roast until the cranberries burst and the mixture is bubbling and caramelized, about 15 minutes.
Remove from oven and mash the cranberries until the mixture is nice and thick.
Once your focaccia is baked, top with your roasted cranberry mixture and cheese.
Place focaccia back into the oven until the cheese is nice and bubbly, about 10 minutes.
Remove, slice, and serve hot.
