Salmon Cakes with Lemon Caper Sauce

This recipe calls for canned salmon for ease; however, leftover or freshly cooked salmon flaked into pieces are both great options for these powerhouse patties with omega-3 fatty acids.

For Lemon Caper Sauce

  • ¼ cup sour cream
  • 1 ½ tablespoons mayonnaise
  • 2 cloves garlic peeled and minced
  • ¼ teaspoon caper juice
  • 2 teaspoons lemon juice

For Salmon Patties

  • 1 425 gram can salmon, drained
  • ½ cup mayonnaise
  • 2 teaspoons lemon zest
  • 1 large egg
  • 1 ½ tablespoons seeded and finely chopped red capsicum
  • ½ cup almond meal
  • teaspoon salt
  • 1 ½ tablespoons capers drained

Instructies

To make Lemon Caper Sauce:

  • In a small bowl, combine sour cream, mayonnaise, garlic, caper juice and lemon juice.
  • Refrigerate covered until ready to use.

To make Salmon Patties:

  • Preheat air fryer at 200°C for 3 minutes.
  • In a medium bowl, combine salmon, mayonnaise, lemon zest, egg, capsicum, almond meal and salt.
  • Form into eight patties.
  • Place four patties in air fryer basket lightly greased with olive oil.
  • Cook for 5 minutes.
  • Gently flip and cook for an additional 5 minutes.
  • Transfer cooked patties to a large serving dish and repeat cooking with remaining patties.
  • Let rest for 5 minutes, then drizzle with lemon caper sauce and garnish with capers.
  • Serve.
