Salmon Cakes with Lemon Caper Sauce
This recipe calls for canned salmon for ease; however, leftover or freshly cooked salmon flaked into pieces are both great options for these powerhouse patties with omega-3 fatty acids.

For Lemon Caper Sauce
- ¼ cup sour cream
- 1 ½ tablespoons mayonnaise
- 2 cloves garlic peeled and minced
- ¼ teaspoon caper juice
- 2 teaspoons lemon juice
For Salmon Patties
- 1 425 gram can salmon, drained
- ½ cup mayonnaise
- 2 teaspoons lemon zest
- 1 large egg
- 1 ½ tablespoons seeded and finely chopped red capsicum
- ½ cup almond meal
- ⅛ teaspoon salt
- 1 ½ tablespoons capers drained
Instructies
To make Lemon Caper Sauce:
- In a small bowl, combine sour cream, mayonnaise, garlic, caper juice and lemon juice.
- Refrigerate covered until ready to use.
To make Salmon Patties:
- Preheat air fryer at 200°C for 3 minutes.
- In a medium bowl, combine salmon, mayonnaise, lemon zest, egg, capsicum, almond meal and salt.
- Form into eight patties.
- Place four patties in air fryer basket lightly greased with olive oil.
- Cook for 5 minutes.
- Gently flip and cook for an additional 5 minutes.
- Transfer cooked patties to a large serving dish and repeat cooking with remaining patties.
- Let rest for 5 minutes, then drizzle with lemon caper sauce and garnish with capers.
- Serve.
