Salmon With Basil, Tomato, and Capers

Coat salmon fillets with a little olive oil, run them under the broiler, and top them with tangy tomatoes and capers for a fine Mediterranean supper.

Makes 4 servings

Prep: 10 min., Broil: 10 min.

  • 1 pound plum tomatoes seeded and chopped
  • ¾ cup lightly packed fresh basil leaves chopped
  • ½ cup olive oil
  • 1 shallot chopped (2 tablespoons)
  • tablespoons lemon juice
  • 1 tablespoon drained capers
  • teaspoon salt
  • teaspoon pepper
  • 4 6-ounce salmon fillets
  • 1 tablespoon olive oil

Garnish:

  • lemon wedges 1 small lemon

Instructies

  • Combine first 8 ingredients in a small bowl, stirring well; set aside.
  • Brush both sides of salmon with 1 tablespoon olive oil.
  • Place salmon on a rack in a broiler pan coated with cooking spray.
  • Broil 3 inches from heat 10 minutes or until fish flakes with a fork.

Notes / Tips / Wine Advice:

To serve, transfer salmon to a serving plate; top with tomato mixture, and garnish, if desired.
