Salmon With Basil, Tomato, and Capers
Coat salmon fillets with a little olive oil, run them under the broiler, and top them with tangy tomatoes and capers for a fine Mediterranean supper.

- 1 pound plum tomatoes seeded and chopped
- ¾ cup lightly packed fresh basil leaves chopped
- ½ cup olive oil
- 1 shallot chopped (2 tablespoons)
- 1½ tablespoons lemon juice
- 1 tablespoon drained capers
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- 4 6-ounce salmon fillets
- 1 tablespoon olive oil
Garnish:
- lemon wedges 1 small lemon
Instructies
- Combine first 8 ingredients in a small bowl, stirring well; set aside.
- Brush both sides of salmon with 1 tablespoon olive oil.
- Place salmon on a rack in a broiler pan coated with cooking spray.
- Broil 3 inches from heat 10 minutes or until fish flakes with a fork.
Notes / Tips / Wine Advice:
To serve, transfer salmon to a serving plate; top with tomato mixture, and garnish, if desired.
