Salmon With Basil, Tomato, and Capers
Coat salmon fillets with a little olive oil, run them under the broiler, and top them with tangy tomatoes and capers for a fine Mediterranean supper.

6-ounce salmon fillets

olive oil
Garnish:

lemon wedges
1 small lemon
Instructies
Combine first 8 ingredients in a small bowl, stirring well; set aside.
Brush both sides of salmon with 1 tablespoon olive oil.
Place salmon on a rack in a broiler pan coated with cooking spray.
Broil 3 inches from heat 10 minutes or until fish flakes with a fork.
Notes / Tips / Wine Advice:
To serve, transfer salmon to a serving plate; top with tomato mixture, and garnish, if desired.
