Smoked Onion Chipotle Sauce

- 1 tablespoon canola oil
- 2 red onions sliced
- 2 teaspoons liquid smoke
- ¼ dry red wine
- 1 teaspoon cumin and oregano
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 2 cups crushed tomatoes
- ¼ cup canned chipotles in adobo
- 1 cup vegetable stock
- 2 teaspoons salt
Instructies
- Sauté the onion in oil and red wine for about 12 minutes.
- Stir in cumin and oregano and sauté for 2 minutes.
- Add honey, vinegar, tomatoes, chipotle, stock, and salt.
- Allow it to simmer for 15 minutes.
- Transfer in a blender and blend until smooth.
