- 1 ½ Cups Frozen Corn
- 1 15-Ounce Can Black Beans, Drained And Rinsed
- 1 7-Ounce Can Diced Green Chilies, Undrained
- Juice Of 1 Medium Lime
- ¾ Teaspoon Kosher Salt
- ½ Teaspoon Ground Black Pepper
- ¾ Teaspoon Garlic Powder
- ½ Teaspoon Onion Powder
- 15 6″ Flour Tortillas
- 2 Cups 8 Ounces Shredded Cheddar Cheese
Instructies
- Preheat Griddle To Medium-High Heat.
- In A Medium Microwave-Safe Bowl, Heat Chicken In 45-Second Increments Until It Thaws.
- Chop Up Any Bigger Pieces Of Chicken, Then Add Corn, Beans, Green Chilies, Lime Juice, Salt, Pepper, Garlic Powder, And Onion Powder.
- Mix Well.
- To Assemble Each Quesadilla, Sprinkle Approximately 1 Tablespoon Cheddar On Half A Tortilla, Scoop On 2 Tablespoons Filling, Then Add More Cheddar On Top.
- Fold Over The Top Of The Tortilla And Cook On The Griddle Until First Side Browns, About 2 Minutes.
- Flip Over And Cook Until Second Side Browns And Cheese Melts, About 2 Minutes.
- Serve Immediately.
